ON THE MENU: this zesty, plant-based Mediterranean Chick'n dish!
- JADA Plant-Based Mediterranean Chick’n
- 1 cup water
- 1 tbsp. oil
- 1 tbsp. olive oil
- 1 shallot - diced
- 1 garlic clove - minced
- ½ cup kalamata olives - sliced
- ½ cup green olives - sliced
- 1 tbsp. capers
- 1 tbsp. fresh basil - coarsely chopped
- Juice & zest of 1 lemon
- Make Chick’n mix according to package instructions: add chick’n, seasoning, water, and oil into a bowl.
- Mix well and then sit for 10 minutes.
- Heat olive oil in a medium pan. Add shallot and garlic.
- Cook until soft and fragrant.
- Add remaining ingredients and simmer on low.
- Once the chick’n has sat, shape into cutlets then cook over medium heat with oil until golden brown on each side.
- Season with Chicken Salt and black pepper.
- Serve immediately!
