Italian Penne with Porkless Meatballs

Our Go-To Vegan Comfort Food: Italian Penne with Porkless Meatballs!



  • Porkless Mix (1 package)
  • 1 cup water
  • 1 tbsp. Oil (plus more for cooking)
  • 1 tbsp. italian seasoning
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. red pepper flakes
  • 1 tsp. Red Pepper Chicken Salt
  • ½ white onion, sliced
  • 2-3 garlic cloves, minced
  • 1 zucchini, sliced into halves or quarters
  • 1 yellow squash, sliced into halves or quarters
  • ½ cup cherry tomatoes, halved
  • 1 jar of vegan vodka sauce
  • 1 box of your favorite penne, cooked.
  • Fresh or dried parsley for garnish
  • Black pepper & Chicken Salt to taste


  1. Mix JADA Porkless Mix, water, oil, and seasonings until well combined.
  2. Cover and refrigerate for 10 minutes.
  3. Drizzle oil in a pan over medium heat.
  4. Add onions and garlic, cook until fragrant (about 2-3 minutes).
  5. Add zucchini, squash, and cherry tomatoes.
  6. Heat until softened (about 3-5 minutes).
  7. Season to taste with black pepper and Original Chicken Salt.
  8. Add vegan vodka sauce and bring to a light boil.
  9. Simmer on low for 10 minutes.
  10. Shape Porkless Mix into meatballs.
  11. Cook with oil over medium heat until golden brown.
  12. Pour vodka sauce over cooked penne and top with meatballs.
  13. Garnish with parsley and enjoy!

  • I have a suggestion why dont you come out with a cookbook. I definitely would buy it as I’m sure many others will too!!!
